Shrimp Gumbo
Ingredients
- 1 cup flour
- 1 cup oil
- 2 quarts water
- 2 pounds shrimp
- 1 1/2 cups chopped green onions
- 6 hard-boiled eggs
Directions
Brown flour and oil to make a dark roux. Slowly add water and allow to medium boil for 30 minutes. Add shrimp and green onions. Slow boil for 20 minutes. Add boiled eggs, cutting 3 in half and putting the other 3 in whole and cook for 10 minutes on medium boil. Serve over rice. Serves 4.
