La Fete Du Cochon: A Down The Bayou Boucherie

Boucheries are common throughout Louisiana as traditional ways of cooking pork for the community and using almost every part of the pig for a dish! In this episode, we had the chance to witness once such celebration all the way down Bayou Lafourche in Golden Meadow. Cooks and Boucherie participants take us through the steps to prepare the feast for the dozens of families that show up each year. Before eating, we chatted with Casey Curole on the economic and cultural context of this tradition in South Lafourche.
