EPISODE 1: John's guest is Nora Dejoie from New Orleans. He prepares her Vegetable Jambalaya in a low fat, low sodium way without sacrificing that great Louisiana flavor. Lillian Boutte, a native New Orleanian, flew in from Germany to perform as the musical guest. She sings "Do You Know What it Means to Miss New Orleans?" and closes the show with a rousing version of "When the Saints Go Marching In."

EPISODE 2: Doug Guerin brings his Uncle Bro's Cajun-Style Stuffed Merlitons and John prepares his own version using heart healthy techniques to reduce fat and sodium without losing the great taste. We take a little video trip to Doug's home to see his collection of cooking devices, like his unusual vertical bar-b-que pit. Doug is from Morgan City, and brings a group of visitors from his town.

EPISODE 3: Carol LeBlanc visits with John, bringing an old Cajun standard - her grandmother's recipe for Chicken Gumbo. John prepares it with a low-fat roux and salt substitutes to make it healthier but still keeping that great flavor intact. Musical guest is Ann Savoy backed by a cajun all-star band. They perform two numbers during the show. Her recent CD "Evangeline Made" contains songs featured in the just released movie, The Divine Secrets of the Ya-Ya Sisterhood.
