Making preparations.

Louisiana Public Broadcasting.
The
new 26-part series is called Louisiana Cooking With A Change of Heart
and features healthier, but still tasty, versions of Louisiana familyrecipes
that have been handed down from generation to generation. "I think
it is important to show people that you can cook healthier Cajun and Creole
meals without sacrificing the great taste, Folse said. Thats
what this new series is all about."

John and his studio audience. |
These
high-energy half hour shows were taped before a live audience at Folses
home in Gonzales.
I
really enjoyed the presence of the studio audience in the new series because
it brought a lot of energy to the show, Folse said. It was
also a treat to interact with the audience before, during and after the
shows.

The Hackberry Ramblers.
|
Many
of the shows also include live musical performances by such Cajun groups
as the Hackberry Ramblers and Black Guidry, Musical guests
during the Saturday marathon include singer Lillian Boutte, a native
of New Orleans, who returned home from Germany to sing Do You Know
What It Means to Miss New Orleans? and Ann Savoy and the Magnolia Sisters,
who perform songs featured on The Divine Secrets of the Ya-Ya Sisterhood
soundtrack.
Folse
has been expanding his media work in the past few years. In addition to
his 13-year relationship with LPB, he now appears Tuesdays and Thursdays
on WAFB-TVs 5:00 p.m. News and hosts a weekly radio call-in show
that is syndicated around the state.
