Sweet Potato Casserole
 
Ingredients:

cups mashed sweet potatoes (if using fresh potatoes, bake or boil them before mashing)
cup sugar
teaspoon salt
eggs, beaten
teaspoon vanilla
tablespoons melted margarine

Directions:
Combine all of the above. Spray the casserole with PAM. Pour all ingredients into casserole. Top with mixture below:

cup brown sugar
cup flour
cup pecans
cup coconut
cup melted margarine

Mix all above well. Pour over the casserole and bake at 350 degrees for 30 minutes. Serves 6-8.
