Shrimp Gumbo
 
Ingredients:

cup flour
cup oil
quarts water
pounds shrimp
cups chopped green onions
hard-boiled eggs

Directions:
Brown flour and oil to make a dark roux
. Slowly add water and allow to medium boil for 30 minutes. Add shrimp and green onions. Slow boil for 20 minutes. Add boiled eggs, cutting 3 in half and putting the other 3 in whole and cook for 10 minutes on medium boil. Serve over rice. Serves 4.
