  Butter Beans (Limas) Ingredients: 2 medium onions, chopped; 1 clove garlic, chopped; ½ cup bacon drippings; 1 ham bone, or 4 ounces ham; 2½ pounds fresh or dried butter beans; 2½ quarts water; salt and pepper to taste Directions: Sauté onions and garlic in bacon drippings until onions are transparent.  Add ham bone, beans and water.  Season with salt and pepper.  Bring to a boil.  Reduce heat and simmer until beans are tender – about 45 minutes for fresh beans or 1½ hours for dried.  You may need to add more water if beans start to stick or become dry.
