Shrimp and Okra Gumbo
 
Ingredients:

pounds fresh okra, cut into ¼-inch pieces,
or
(16 ounce) cans
large tomatoes, peeled and chopped
medium onions, chopped
cup oil
quarts water
Salt and pepper to taste
pounds shrimp, peeled and de-veined

Directions:
Cook okra, tomatoes and onions in oil for 45 to 60 minutes or until okra is not stringy or slimy. Add water and season with salt and pepper. Simmer 30 minutes. Add shrimp and cook 10 to 15 minutes longer. Serve over cooked rice. Serves 6.
