Old Style Rice Pudding
 
Ingredients:

well-beaten eggs
cups sugar
teaspoon salt
cups scalded milk
cup butter
cups cooked rice, cooled
cup raisins or 1 cup cooked apples
teaspoon vanilla, Watkins
teaspoon cinnamon
teaspoon nutmeg

Directions:
Combine eggs, sugar and salt, and cream well. Gradually add scalded milk. Add butter, rice, raisins, vanilla, cinnamon and nutmeg. Mix thoroughly. Pour into 1 quart casserole sprayed with PAM. Set in shallow pan which has about 1-inch water in it or set a pan of water beneath the casserole while it is baking. This prevents pudding from drying out while baking. Bake at 325 degrees for 1 ½ hours. Serves 4-6.
