Beef Vegetable Soup
 
Ingredients:

beef soup bones with meat around them
medium carrots, sliced (optional)
medium potatoes, peeled & cut into chunks
large onion, chopped or sliced
large bell pepper, julienned
stalks celery, cut into chunks
medium tomatoes, peeled & chopped
salt & pepper to taste
Louisiana red pepper sauce to taste

Directions:
Combine all ingredients in a large stockpot. Add enough water to cover all. Bring to a boil over medium heat. Cook 2 hours or until meat is tender. Serve over rice.
