Directions:
Brown seasoned chops in oil; remove from pot and set aside. Sauté onions, bell pepper and celery in oil that chops or ribs have been browned in. Remove as much oil as possible. Return chops to pot and remove from heat. In another pot, caramelize sugar, stirring constantly, until sugar reaches a dark brown color -- do this on a low flame. Be patient – it takes a while. Remove from heat and add 2 cups water slowly. Bring back to a boil until all caramelized sugar is dissolved with water. Pour the mixture into the pot with pork and sautéed vegetables. Bring to a boil. Add onion tops, raw rice and 4 cups water. Stir well, making sure rice has enough water in it to cook thoroughly. Cook on medium heat until all water boils out of it. Cover and simmer for 15 minutes. Serve hot. Serves 4-6.
