Eggplant Casserole
 
Ingredients:

medium eggplant, chopped
tablespoons bacon drippings
cup diced onions
tablespoons margarine
14.5 ounce can tomatoes, chopped
tablespoon chopped parsley
teaspoon sugar
Salt and pepper to taste
cup buttered breadcrumbs
cup coarsely shredded cheese

Directions:
Sauté eggplant in bacon drippings for 5 to 6 minutes. Transfer to a baking dish. Sauté onions in margarine until yellow. Add tomatoes, parsley, sugar and salt and pepper. Stir and bring to a boil. Pour mixture over eggplant. Sprinkle with breadcrumbs and cheese. Bake at 350 degrees for 45 minutes.
