Pineapple Upside Down Cake
 
Ingredients:

cup butter or margarine
cup light brown sugar
pineapple slices, drained (reserve juice)
maraschino cherries
box Duncan Hines White Cake Mix (no pudding in the mix)
cup sugar
cup oil
eggs, beaten
Milk to equal 1 cup after pineapple juice is in cup

Directions:
First, melt butter or margarine in a large iron skillet or heavy duty skillet. Add brown sugar and blend well (pat down with fingers). Arrange pineapple slices over butter and sugar mixture. Place a cherry in the center of each slice. Then mix white cake mix, sugar, oil, beaten eggs and milk plus pineapple juice. Beat well. Pour the cake batter over the pineapples and cherries in skillet. Bake at 350 degrees for 25-30 minutes (test with a toothpick or broom straw at center of cake—should come out clean if done). Invert onto a serving plate immediately. Serves six to eight.
