Chicken Stew
 
Ingredients:

4-5 pound hen or 1 large fryer, cut into serving pieces
salt & pepper to taste
cup flour
cup oil
quarts water
cup onion, chopped
cup bell pepper, chopped

Directions:
Season chicken. Set aside. Brown flour in oil until chocolate colored. Add 1 quart water and bring to a rapid boil. Drop chicken pieces into pot; add onions and bell pepper. Cover and allow to boil till chicken is real tender. Stir occasionally and make sure the gravy doesn’t get too thick. If it does get too thick, add small amounts of water until gravy gets the right consistency to serve over rice. Serves 6.
