Baked Catfish
 
Ingredients:

lb catfish filets
medium onion, sliced
medium bell pepper, julienned
medium tomato, wedged
sprigs green onions
medium lemons, sliced
juice of 1 lemon
salt, pepper and pepper sauce
c water
lemon pepper

Directions:
Line baking pan with heavy duty foil. Spray with non-stick coating. Lay seasoned filets in pan. Put onion slices, bell pepper, tomato wedges, green onion sprigs and slices of one lemon on top of fish filets. Sprinkle lemon juice over all, add water to bottom. Cover with foil. Bake at 375 degrees for 1 hour. Remove foil and bake for 15 more minutes.
