Alligator Sauce Piquant
 
Ingredients:

cup onion, chopped
cup bell pepper, chopped
cloves garlic, chopped
cup of oil
14-ounce can Rotel tomatoes
8-ounce can of tomato sauce
tablespoons of tomato paste
cup of roux
pounds of alligator meat
salt & pepper to taste
cup green onion tops
cup parsley
cups of water

Directions:
Sauté onion, bell pepper and garlic in oil. Add Rotel tomatoes, tomato sauce, tomato paste and season to taste with salt and pepper. Cook about 30 minutes, then add roux and water. Add alligator meat, onion tops and parsley and cook for 3 more hours on a medium heat. Cook until sauce is thick and meat is tender. Add water according to desired thickness of sauce. Serve over rice. Serves 6.
