109 CAJUN COFFEE

Prep Time: 1 Hour
Yields: 4–6 Servings

Comment:
This recipe makes a very strong black coffee that is enjoyed in the bayou region. Traditionally, the coffee is served in a demitasse with one heaping spoon of sugar. This strong coffee will certainly wake-up the early morning fisherman.

Ingredients:
8 tbsps ground dark roast coffee
4½ cups cold water

Method:
In the top of a French drip coffee pot, place 8 tablespoons of dark roast coffee. In a 1-quart saucepot, bring water to a rolling boil. Drip boiling water through coffee, 2–3 tablespoons at a time, until all water has been used. To keep coffee warm, place pot in a frying pan filled with water over low heat. The longer coffee sets, the stronger it will become.
